Gayandi Chulendra Manike Ekanayake Ekanayake Mudiyanselage

Gayandi Ekanayake is a Junior Researcher at the Estonian University of Life Sciences. Her PhD focuses on the valorization of agricultural waste, such as potato peels and microalgae, into plant-derived extracellular vesicles with antioxidant and antimicrobial properties. Her research supports green and blue bioeconomy goals by promoting sustainable, functional bioproducts for food safety and health.
